An easy morning or afternoon tea bake you can whip up in your caravan.
A Note for Caravan Bakers
These smell amazing when cooking however they are only really good on the day they are made so freeze any leftovers and reheat in the microwave for 45 seconds. A word of warning: The jam will be like lava when these come out of the oven so do not skip the step* that says cool for 10 minutes. Ask me how I know.

Jam Doughnut Muffin Ingredients (Makes 8)
To make 8 muffins you will need
- 1 egg
- 1 cup milk
- 3/4 cup oil, I use canola but any will do
- 1 tsp vanilla essence
- 3/4 cup sugar
- 2 cups self-raising flour
- 8 tsp jam of choice – raspberry or strawberry are best
Glaze
- 2 Tab butter melted
- 2 Tab sugar (extra)
Preparing the One-Bowl Batter
First, line your muffin tin with papers. Do not be tempted to skip this step, especially if you have been generous with the jam as when you remove the tin for the oven you would rather throw it out than wash it up!
In a large bowl, whisk together the egg, milk, oil, and vanilla. Add the sugar and flour all at once and, using a spatula or large metal spoon, mix until JUST COMBINED. Over mixing will result in tough muffs so be very gentle.
Some lumps in the batter are okay but most of the flour should be incorporated.
Filling and Baking the Muffins
Place a tablespoon of mixture into each muffin cup and use a teaspoon to make a little well. Place a teaspoon of jam into the well and then cover the jam with another tablespoon of muffin mix. You should get about 8 muffins from this amount of mix. They will look a bit rough and ready at this point but worry not, they will sort themselves out in the oven.
Bake at 180* for about 30 minutes. Remove them when they are golden brown.
The Signature “Doughnut” Glaze
If you are boujee and travel with a pastry brush, use this to bathe the tops of the muffins with the melted butter. If you don’t have a pastry brush, just use a teaspoon. Sprinkle the tops with the reserved sugar.
*Let them cool for 10 minutes, remove them from the cases and serve with a nice cuppa.
