That’ll do pig rub by macca

I had a small piece of pork to roast, not the best bit I have to admit, but it was small and about the weight I wanted. Obviously, with a selection of four Rubs by Macca in the kitchen, it was time to open up the ‘That’ll Do Pig’ rub and see how good it was.

Ingredients:

  • Pork to roast
  • Macca’s That’ll Do Pig Rub
  • Good roasting potatoes
  • Vegetables of choice
  • Head of garlic
  • Lemon infused Australian olive oil
  • Butter
  • Salt and pepper
  • Ovenproof baking paper

Putting it all together:

I cut the potatoes to size and cooked them in the microwave for 4 minutes. You can par-boil them if you prefer, but they do get a great crunch going when they have been partially cooked. When they are ready, drain them and coat them in the lemon-infused olive oil.

Make sure the pork skin is really dry, and that it has been scored then rip into the Rub and work it into the pork skin. I do mean work it in. I put the potatoes in the base of the roasting tray and the pork is on a rack in the same tray. Put this into the oven on whatever it says on the packet, for as long as you need. I had mine on about 180° for around 50 minutes, it really was a small piece of pork, so the pork and spuds could go in at the same time.

To go with this I had a bulb of garlic, which I broke up, cut the bottom off and threw in with the potatoes. An ear of sweet corn, which I cut into four, put some butter on each bit and some fresh black pepper. I wrap this up in the ovenproof baking paper and put it into the oven for the last 15 to 20 minutes. When it is really fresh it only needs about 10 minutes and you get the most delicious flavour ever. Actually it is delicious raw too, sometimes it doesn’t need any cooking!

I topped and tailed some beans, added some snow peas and some sliced red and orange mini capsicum. Put it all on some oven proof baking paper, add a bit of butter on top, a dash of pepper and wrap it up. This just needs to be in the oven for about 5 minutes. We really don’t overcook our veggies in this house!

When the pork is done, take it out, cover it with tin foil (which you can recycle in most places) and let it rest. Crank up the oven a bit if the potatoes aren’t as crispy as you want.

Carve the pork, get everything else out and away you go. It was a delicious meal and the That’ll Do Pig Rub was exceptional.
