Crumbed Chicken and Dipping Sauce

Ingredients:

— Chicken thigh or breast fillets, cut into small pieces

— Oil, for frying

— Flour

— 1 Egg beaten

— Crushed cornflakes

— Sauce – mayo mixed with seasoning – like Macca’s Captain James Chook Rub

Method:

Coat the chicken pieces in flour, egg then cornflakes and put into hot oil deep enough to cover chicken. Mix the sauce together, wait patiently for the chicken to cook – it won’t take long. When it’s cooked, drain it on some paper towel. Wait a little for it to cool enough so you can pick it up, dip into the sauce and enjoy happy hour.
